S'Mores Bars
I can't get enough of these S'more's Bars and apparently neither can my family.
Ingredients:
1 stick butter, melted
3/4 cup sugar
1 egg
1 teaspoon vanilla extract
1 1/3 cups all-purpose flour
3/4 cup graham cracker crumbs
1 teaspoon baking powder
1/4 teaspoon salt
2 cups of semi sweet chocolate chips
3 cups miniature marshmallows
Preheat the oven to 350 degrees. Grease an 8-inch square baking pan.
Beat melted butter and sugar together until well-blended. Add the egg and vanilla extract; mix well. In another bowl, combine the flour, graham cracker crumbs, baking powder and salt. Add the flour mixture to butter mixture, mixing until blended. Press half of the prepared dough into the prepared pan and bake 15 minutes.
Arrange chocolate chips over baked layer and sprinkle with miniature marshmallows. Top with the remaining dough and bake 10-15 minutes. Cool completely and cut into bars. Makes 16 servings.
I usually double this recipe and put it in a 9 x 13 baking dish. Trust me no matter how many you make it will never seem like enough.

Scenes From My Weekend
Who can't resist a double rainbow? Maybe it means good things are on their way or maybe it is to remind me how blessed I am.

I walk by this house everyday on my way to work, the pops of color perk up my mornings.
Favorite easy meal of the week, salmon on the grill and mixed greens tossed with asparagus, candied walnuts, goat cheese and a vinaigrette.
