We are attempting to eat healthier around here, less carbs, more protein and whole foods. I figured summer is the best time to kick up the good eating habits around here.

This is my first attempt at making quinoa. I just boiled it in salted water and added garlic and spinach after it was cooked. This was actually the first time I have ever eaten quinoa and it wasn't bad. It kind of has a weird texture and it is really filling, we could only eat about half of the bowls I made for us. Overall I think I will try it again but next time add more favors, maybe cook it in chicken stock.
